Pacific Place welcomes new Italian fine dining restaurant

Domani, opened on 7 Nov (Friday), with the ambition to be Hong Kong’s finest Italian dining establishment. With Mauro Uliassi, a Michelin star chef behind the menu, a contemporary and artistic glass gazebo to call home and a relaxed ambience of modern elegance, Domani is set to reignite Hong Kong’s dining scene.

Domani is the futuristic dining vision of El Grande Concepts, in conjunction with Swire Properties, the progressive architecture of the world renowned Thomas Heatherwick coupled with the clean classic lines of interior designer, Branko Pahor of B&Co.

Michelin Star Chef, recipient of three prized Gambero Rosso forks and this year’s winner of the prestigious Kungsfenan Award for the best seafood restaurant in the world, Mauro Uliassi’s menu for Domani takes its culinary cue from the traditions of the north eastern Adriatic Coast of Italy, specifically the seaside towns of Senigallia and Ancona. It will serve variations of traditional dishes including unique combinations of flavours and ingredients.

Mouth-watering specialties of the house include dishes like “Albanella di crostacei e molluschi” prepared by cooking langoustine, tiger prawns, crabs, clams, shrimp, and vegetables and seasonings individually, then placing them in a bell jar to lock in the flavours. The jar is heated and shaken before serving, and theatrically finally opened in front of the diner for maximum appreciation of the aromas. Further menu items include “fondente di patate con gelatina di tartufo nero e mazzancolle” which combines prawns, vegetables, truffles and black squid ink with seasoning and herbs to celebrate the seasonal delicacy and subtle flavours of the truffle.

A vision of Master designer Thomas Heatherwick, Domani includes his trademark use of natural materials to create an all-glass structure with a free-form steel roof. Located on the 4th floor of Pacific Place in its own garden, form and function combine seamlessly to create one harmonious entity.

Heatherwick’s previous projects include the beautiful Rolling Bridge in London, La Maison Unique for Longchamp in New York and East Beach Café in Littlehampton. He is also responsible for designing the British Pavilion at the prestigious Shanghai Exposition in 2010.

The interior design concept by Branko Pahor of B&Co is soft and muted, allowing the light and natural materials to create a clean and fresh ambience. It is an interior that is both comfortable and chic, timeless and elegant, unpretentious yet classy. All the materials and finishes underline this design philosophy, with soft brushed wood, modern white columns, ceiling design that looks like ribbon wound loosely around the restaurant, and an open and airy ambiance that allows the food to take centre stage.

The architecture of Domani is part of the Swire Properties’ vision to imbuing Hong Kong with a fluid approach to premium lifestyle experience. This new standalone, semi-alfresco restaurant on the re-landscaped podium level is part of Pacific Place’s Design Improvement Project elevating the iconic destination to an even more sophisticated level.

“Our invitation to international award winning designer Thomas Heatherwick was intended to challenge previous norms and to introduce a new aesthetic to Pacific Place,” said Mr. Jolyon Culbertson, Director and General Manager of Swire Properties. “Using fluid, streamlined shapes in soft, warm tones, the complex will literally embody a new frame of mind — a highly tactile design that will make Pacific Place an exceptional venue for all the senses.

Mauro Uliassi also has a restaurant in Senigallia where for the last 18 years he has served Italian classics in inventive ways at his flagship restaurant, Uliassi.
