Acanto Restaurant, the flagship outlet at Dorchester Collection’s Hotel Principe di Savoia in Milan, is entering a new era under the leadership of its newly appointed executive chef, Matteo Gabrielli.

Born in the province of Varese, Lombardy, 33-year-old Gabrielli has a wealth of culinary experience having worked at hotels including London’s Four Seasons Park Lane and Mandarin Oriental Hyde Park, as well as various renowned restaurants in Italy.

Most notably, Gabrielli worked under Heston Blumenthal in London, the pioneer of multi-sensory cuisine and holder of three Michelin stars which significantly shaped Gabrielli’s expertise.

After five years abroad, Gabrielli returned to Italy to work alongside star chefs such as Antonio Guida at the celebrated Pellicano restaurant in Porto Ercole, Tuscany and chef Vito Mollica, before joining Hotel Principe di Savoia in 2019 as a sous chef.

Ezio Indiani, general manager at Hotel Principe di Savoia says, "We are delighted to have Matteo Gabrielli at the helm of Acanto Restaurant. His dishes are inspired by the desire to showcase the best of Italian cuisine and its finest ingredients. We believe in respecting traditions and experimenting with new techniques, and Matteo perfectly embodies these values.”

Under Chef Gabrielli's creative direction, Acanto introduces a revamped menu featuring a six-course tasting experience and a dedicated section celebrating classical Italian cuisine, inspired by his Lombard roots.

This culinary homage is elevated with a touch of originality and innovation, utilising the highest quality raw materials. On Sundays from 12.30 to 15.00, Acanto will be offering a diverse brunch with five themed sections featuring hors d'oeuvres, vegetarian recipes, oysters and raw seafood, DOP cheeses and cured meats.

Chef Gabrielli creates express dishes using seasonal ingredients, complemented by desserts from pastry chef Beniamino Passannante.

Acanto offers a relaxed and warm ambiance, complemented by floor to ceiling windows with views of the Italian-style garden.

Whether it’s a business lunch or an intimate evening, Acanto provides an inviting atmosphere for both corporate and leisurely occasions.
