Walter Miculan has joined Hilton Abu Dhabi by the Corniche in the role of Executive Chef. With more than 25 years' experience in the hospitality industry, four of which have been spent within the Hilton Hotels & Resorts family, Walter is now responsible for managing the kitchen teams across Hilton Abu Dhabi.
Born in Italy in a city close to Rome, Walter found a passion for cooking through his grandparents who introduced him to the importance of fresh ingredients. He followed his dream to become a chef by joining a hotel management college in the city of Spoleto in Italy.
During his five-year training, Walter took up apprenticeships in restaurants across Italy to practice his kitchen skills. In 2004, he left Italy to work at a hotel in Geneva, which kicked off his career as a professional chef. This opportunity led him to join the hotel chain Four Seasons, through which he travelled from London and Maldives to Hungary and Egypt.
It was in Alexandria in Egypt that Walter had the honor of being the first Italian Chef at Four Seasons San Stefano, where the Italian President once visited and praised him for bringing the values and culture of Italy outside the homeland. Walter later joined The One and Only group in Maldives.
In 2013, he moved to Hilton Dubai Jumeirah Beach as Executive Sous Chef, where he worked across two properties - a resort and a residential complex. He then became Cluster Executive Chef at the Hilton hotels in Alexandria in 2014, where he was also responsible for the launch of Hilton Alexandria King's Ranch.
"My menus highlight my love and passion for fresh produce. I believe quality and freshness are the key elements to creating outstanding food," said Walter. "Food should taste as natural as possible, especially when using seasonal ingredients. I believe that when a guest visits a restaurant, it is not just about feeding their hunger. It's about the complete dining experience, and at Hilton Abu Dhabi we strive to deliver a memorable experience on every visit."
Since joining the hotel, Walter has already brought his culinary vision to life, with the creation of four special menus for Escape, Ocean Café, Jazz Bar & Dining and Bocca - some of the restaurants at the historic hotel.
