A surprise date is full of excitement, anticipation and a sense of adventure, but it is the venue that is normally the surprise, not the food you order. Dava Chef de Cuisine, Jusman So, is giving this concept another spin with a four-course Surprise Menu.

Rather than the venue, the meal itself is the surprise, with guests not knowing what dish will be served until each course arrives at their table. Chef Jusman takes into account any dietary restrictions before preparing each guest’s distinctive meal, based on his latest inspirations and the best ingredients available at that time.

"We are receiving very positive feedback from guests who enjoy the anticipation and fun of a Surprise Menu, and who are happy to put complete faith in the chef and my choices," said Jusman. "I personally enjoy it too, as it allows me to be more spontaneous and creative on a daily basis, using ingredients that are often harder to find and therefore may not be on the main menu. For example, certain types of seafood may not be available every day, but when they are, I'm able to use them for this new menu to offer guests something different and extra special."

Offered alongside Dava's regular a la carte and nightly degustation menus, the four-course Surprise Menu is priced at Rp450,000++ per person.

Dava Chef de Cuisine Jusman So is one of Singapore's most acclaimed chefs. His 40-seat fine dining restaurant, Sage, was nominated 'Best New Restaurant' at the World Gourmet Summit 2008 (the same year Jusman won Best Rising Chef), awarded one of Singapore’s Best Restaurants by Singapore Tatler magazine, and named on the prestigious Miele List in 2010. Since moving to Dava, Jusman has relaunched the menu as modern French and introduced his most popular signature dishes, enhancing them further using local flavors and the best available ingredients to offer a new level of gastronomical refinement.

About AYANA Resort and Spa

Named after a ‘place of refuge’ in Sanskrit, AYANA is perched on limestone cliffs up to 30 meters above the Indian Ocean near Jimbaran Bay on Bali’s south-western peninsula.
