The elegant Fiesta Americana Grand Chapultepec in Mexico City, Mexico, recently revamped its culinary leadership with rising star Jose Bossuet Martinez. The new executive chef has an impressive history that makes him one of the hottest new talents in Mexico.
In his new role, Executive Chef Jose Bossuet Martinez oversees production of the hotel’s signature restaurant and bar as well as the hotel’s banquet facilities, which can accommodate up to 200 attendees. Martinez hopes to further strengthen the hotel’s leadership positioning, defining dining for the luxury business hotel segment. His goal is to combine and integrate healthy living, a sense of well being, refined taste and personalized service into the guest experience at Fiesta Americana Grand Chapultepec.
The key elements of Martinez’s cuisine for the hotel include the use of healthy international ingredients, combined with the finest regional and local goods from progressive growers that respect the earth and use sustainable growing methods.
For the hotel’s breakfast buffet, Martinez has introduced a variety of high-quality foods, including dried cranberries, agave nectar, pumpkin seeds and fresh seasonal fruits and juices. The salmon is marinated in-house, showing the restaurant's respect for the rich natural flavors and methods of traditional Western cuisine. And at snack time, Martinez serves up classic sandwiches from Mexico and around the world at the hotel’s deli, ensuring that even between-meal snacks continue the hotel's commitment to healthy foods and fresh flavors.
The lunch and dinner menus highlight the hotel's innovative cuisine, with dishes from Indochina, North Africa, the Mediterranean and Mexico, guaranteeing that guests will be surprised and delighted with the day's menu. Prior to being named executive chef of the Fiesta Americana Grand Chapultepec, Jose Martinez was executive chef for Karisma Hotels. He also served as the head chef to former Mexican president Vicente Fox, where he was in charge of the Presidential Airplane Committee, traveling with the president on international trips. He also personally prepared the menu for the most important day in President Fox’s life, his wedding.
Martinez is a former member of the exclusive Club des Chefs des Chefs, or the Chefs of the Head of State, an elite club consisting of personal cooks to kings, princes and presidents. He was, in fact, the first Mexican chef to become a member of this distinguished club and at the young age of 25. In 2007, this young executive chef was also awarded the Global Quality Foundation Award for his commitment to outstanding service, creativity, entertainment, customer satisfaction and overall excellence. Martinez has studied and worked in Mexico, Monaco and France and won two gold medals in the Cuisine Olympiad in Berlin in 1996.
