New Concept From the Team Behind Tao Las Vegas

The innovative team behind the uber-successful Tao Las Vegas opened LAVO, a new dining and nightlife concept, in September of 2008 at The Palazzo Resort Hotel Casino in Las Vegas. The restaurant has transformed its culinary offerings to an Italian menu that is already pleasing local diners and travelers alike with its simple and classic flavors.

Latin for “to bathe or cleanse,” LAVO is an AvroKo designed space that derives inspiration from ancient bathhouses with a menu that highlights Italian cuisine.

The journey from lounge to restaurant to nightclub begins with an entry into the lounge surrounded by brick walls and water stained plaster. Twenty foot ceilings of old wood and low chandeliers crown an area featuring a curved bar and leather seating. The restaurant is highlighted by a spectacular glass and wood screened bridge adorned with flowing water features.

The screened bridge leads the way to the intimate second story nightclub, which is highlighted by a domed ceiling above the dance floor. The nightclub features vaulted glazed tile arches that open to the main room where revelers can enjoy a sexy, elevated VIP area with posh banquettes, embossed leather walls and mirrored mosaic tile niches.

THE RESTAURANT & CUISINE

Chef Ralph Scamardella and his team of experienced chefs treat guests to a culinary journey with selections of classic Italian dishes. Signature highlights include Baked Clams Oreganato ($14) featuring Littleneck clams with toasted bread crumbs and garlic butter; Heirloom Tomato Bufala Mozzarella ($16) that treats diners to fresh buffalo milk mozzarella served over a crispy salad with sliced tomato, red onion and fig balsamic vinaigrette; Kobe Meatballs ($18 - 21) where guests can select Kobe-grade meatballs served with sausage ragu, whipped fresh ricotta or salad and a garlic crostini; and Roasted Chilean Sea Bass ($34) prepared with fresh heirloom tomato butter and served alongside Portobello mushrooms.

LAVO also features a wood burning brick oven, producing some of the best pizzas in Las Vegas. The Lobster Scampi Pizza ($32) is a delicate balance of roasted lobster, crispy fingerling potatoes, garlic and fresh herbs. Pasta selections not to be missed are Penne Seafood Alfredo ($24), featuring shrimp, scallops, and lobster butter in a light cream sauce; Orrechiette Broccoli Rabe and Sausage ($19), served with sweet sausage, garlic, oil and breadcrumbs; and Lobster and Asparagus Risotto ($28) with roasted pine nuts and preserved lemon. Guests can also select from a variety of cuts of USDA prime steak, aged 21 days, served with an assortment of toppings and sauces to choose from.

No meal is complete without dessert and at LAVO where guests will be tempted by the satiating selections by Pastry Chef Lynn Hyzer (ALEX and Daniel Boulud Brasserie at Wynn Las Vegas).

Highlights include Rolled Chocolate 7 Layer Cake ($12), rich chocolate cake served with vanilla crème and toasted marshmallow sauce; Apple Crostata ($10), a playful take on the classic apple pie served with brandied cranberries in a cider caramel sauce; and Warm Chocolate Bread Pudding ($9), a house favorite, accented with creamy dulce de leche and vanilla ice cream.

A Corporate Executive Chef with the TAO Group for the past two years, Chef Scamardella was raised in an Italian-American household in Brooklyn, New York and showcased his talents as a chef partner at Carmine’s in New York City.

“I am gratified that I am able to serve the food I love to cook to such a vibrant city like Las Vegas,” Chef Scamardella says. “LAVO’s menu delivers the classics while giving discerning diners something new to try any night of the week.”

The 300 seat restaurant includes a 180-seat main dining room, a 20-seat private dining room and 100 seats on the outdoor patio overlooking the famed Las Vegas Strip. The restaurant is open seven days a week dinner starting at 5 pm, with late night dining until 1am on weekends.

THE NIGHTCLUB

The 5000 square foot nightclub features 40 bottle service tables, state of the art audio visual systems and the sounds of resident DJs Vice, Five, Crooked, and Galeano. The nightclub is open six nights a week.

THE TEAM

Marc Packer, Rich Wolf, Jason Strauss and Noah Tepperberg are all names synonymous with successful restaurant and nightlife destinations. Together, with Managing Partner Lou Abin, they opened Tao Las Vegas at the Venetian Resort Hotel Casino in 2005, that quickly became one of the most sought after culinary and nightlife attractions in the city. A favorite of celebrities, locals and those in the know, Tao Asian Bistro, Nightclub and Beach has been the highest grossing venue in the country for the past three years. Individually and collectively, these operators have been the force behind such creations as Tao New York, Marquee Nightclub, The Stanton Social, Rue 57, Avra Estiatorio and Angelo & Maxie’s Steakhouse.

LAVO is designed by AvroKo, a full service, integrated design and concept firm that develops architectural environments, lifestyle brands and products. The company has developed design concepts for such global hotel groups as Starwood and for restaurants including The Stanton Social and Public in New York and Social House and Company in Las Vegas.
