Crédit photo © Hyde Ibiza One of Mexico’s leading chefs, Tomás Bermudez, will be hosting the second takeover of the “Best of The Best Culinary Series” on Friday, 19th and Saturday, 20th July, at Cala Llonga’s newest Latin American restaurant Cuyo situated at the Hyde Ibiza hotel.
Renowned for his culinary hotspot La Docena, a neighbourhood oyster bar and grill recognised as one of the best restaurants in Latin America with locations around Mexico, Bermudez will be joined by three top chefs from Mexico's culinary scene.
On both days, Bermudez and the team of chefs will host a special six-course dining experience paired with a unique cocktail and mezcal menu exploring the vibrant flavours of Mexican cuisine and mixology. The menu includes a variety of fresh seafood dishes and sweet courses including a grilled Zarandeado Fish, Guajillo Garlic Shrimp and Dulce de Leche Volcano, curated in collaboration between La Docena and Cuyo.
The dishes can be paired with a selection of Lágrimas de Dolores mezcals, by German Gutierrez.
The Masparillo, Cenizo, and an all new mezcal, imported directly from Mexico, will be served. Guests will be the first to try this unique flavour from the first batch, made from an agave plant that has never been used in mezcal production before.
Commenting on the collaboration, Burmudez says, “I am excited to share the flavours of La Docena with the people of Ibiza and international guests of the hotels. The new opening of Cuyo is the perfect collaboration to curate an exclusive set menu, alongside a team of Mexico’s finest chefs. ”
The residency marks the second of six takeovers throughout the summer at Ibiza's two newest hotels, Mondrian and Hyde, hosting the world's top chefs in their kitchens. These chefs will curate unique Latin American and Asian set menus in Ibiza's newest destination restaurants, Niko and Cuyo, located in Cala Llonga.
The first of its kind for Ibiza, the series marks a key moment for the culinary and cultural scene of Cala Llonga.
Each month from June to September, talented chefs heading restaurants recognised in the prestigious "50 Best" rankings will land in Ibiza to showcase their gastronomical vision to guests and locals of the island at Niko and Cuyo restaurants to create unforgettable, synergistic meals.
The “Best Of The Best Culinary Series” programme is listed below. The dates and further details on each residency will be revealed in the coming weeks.
