Bridor, ‘The pure pleasure of bread and Viennese pastries’, was the official partner of the Jean Delaveyne trophy organised by the association ‘Les Toques françaises’.
The aims of this association and the trophy partners alike are to promote French cuisine, defend regional produce and help young people to perfect their skills.
Over the course of the years this competition has become a key event for French gastronomy.
For the 6th award the selected theme was:
- Entrée: Snails and foie gras (free choice of recipe)
- Main course: stuffed squab with three accompaniments (free choice of recipe)
- Dessert: chocolate éclairs
Walter Ishizuka, Chef de partie at the Ritz, won the final for the Trophy that took place at TECOMAH (Jouy en Josas, Yvelines) on last April 2nd, with the jury presided by Jean-Marie Gautier (Meilleur Ouvrier de France (Best Craftsman in France) – Hôtel du Palais at Biarritz).
In the presence of many famous personalities (300 guests), he was awarded a porcelain vase from the Royal Sèvres Manufacture offered by the President of the French Republic.
And for the winner of the 6th award the Jean Delaveyne Trophy will act as a springboard for becoming one of the Meilleurs Ouvriers de France, as it has for previous winners.
Who was Jean Delaveyne?
Jean Delaveyne was named Meilleur Ouvrier de France for patisserie in 1952. Overflowing with talent and unbridled creativity he rapidly became one of the greats of French gastronomy.
