Angelini Italian restaurant at Kowloon Shangri-La, Hong Kong takes pride in presenting celebrated chef Pino Lavarra from the renowned Michelin two-star Rosselinis restaurant at Palazzo Sasso Hotel. Between 2 and 5 November 2011, Chef Pino will preside over the kitchen of Angelini alongside the restaurant’s head chef, Patrizio Roncato, and showcase his culinary skills in a specially designed menu.
Recognised as one of the most important chefs in Italy, Chef Pino has perfected both the traditional and innovative cooking styles he learned in various prestigious hotels and establishments in Germany, Monaco, England, Malaysia and his native Italy. Named “One of the Best Chefs in the World” by the American Academy of Hospitality Sciences, the acclaimed Chef Pino has a list of accolades and helped Rosselini – one of the restaurants he oversees – to get a two-star rating in the Michelin Guide.
Chef Pino has prepared a special dinner menu to delight the discerning palate. Guests can opt to have a four-course or five-course dinner menu, with or without wine pairings. The fine dining journey will begin with Buffalo Mozzarella Cheese: Snow, Liquid, Balloon, Marshmallow and Deep-fried, matched with Balter Trento Doc Metodo Classico Brut Riserva 2004 or Olianas Vermentino 2010. This will be followed by the pasta dish Black Linguine and Cuttlefish Tagliatelle, Tomato and Muscovado Sugar Sauce, and Caramelised Parmigiano complemented with Fattoria San Lorenzo Verdicchio di Jesi ll San Lorenzo Riserva 1998 or Quintodecimo Fiano di Avellino Exultet 2009.
For the main course, guests can select between Parsley Lacquered Sea Bass, Crispy Red Garlic, Chilli and Anchovy Emulsion Sauce accompanied with Marisa Cuomo Fior d’Uva 2009 or Ermes Pavese Blanc de Morgex et de la Salle Nathan 2010 and Lamb Fillet Coated with Rose and Rosolio Liquor Crust, Porcini Mushrooms, Sweet and Sour Beetroot and Crystallised Potato with Thyme Jus, served with La Magia Brunello di Montalcino Riserva 2004 or Paternoster Don Anselmo 2006. Diners can also choose both main courses for a five-course dinner. To provide guests with a sweet finish, Amalfitan Lemon Soufflé with Red Beer, Raspberries and Basil Sorbet will be paired with Cooperativa Agricola delle Cinque Terre Sciacchettrà’ 2010.
The four-course dinner menu is priced at only HK$1,200 per person and HK$1,580 per person with wine pairings. The five-course dinner menu is priced at just HK$1,400 per person and HK$1,880 per person with wine pairings.
