Two of the world’s largest and finest vertical wine collections from Château Cheval Blanc and Château d’Yquem, along with other premium wines, are now available at Shook! Shanghai
Shook!, the award-winning dining venue by YTL Hotels, soft-opened atop The Swatch Art Peace Hotel on the Bund in May 2011. Offering a show-stopping pan-Asian gourmet experience prepared by top chefs in four open theater kitchens, Shook! also boasts one of China’s most sought-after wine collections.
Lining both walls of the entrance hallway leading to the restaurant, the impressively designed wine cellars showcase some of the world’s finest wines and Champagnes. The centre piece of the wine cellar comprises two rare vertical collections of Bordeaux’s elite estates – Chateau Cheval Blanc and Chateau d’Yquem. Each collection offers vintages from 1945 through 2008. Both Cheval Blanc and Yquem are among the most coveted wines in the world. Several of the vintages are rare collectors’ items.
Chateau Cheval Blanc is one of the ‘Big Eight’ Bordeaux vineyards, and has been the leading wine in the St. Emilion region for over 50 years. Described as an opulently rich, full-bodied and fruity wine, it evolves spectacularly reaching its full majesty after several decades. Shook!’s Chateau Cheval Blanc selection spans more than seven decades. The prized 1947 vintage, awarded several times as one of the world’s premier wines, is priced at RMB 409,000, with other top vintages including 1945, 1948, 1950, 1959, 1961, 1990 and 2000.
Yquem is hailed as the most unique wine in Bordeaux and is the only one elevated to the supreme rank of Premier Cru Superieur. Its legendary ageing potential, resulting in incredibly complex and elegant wines, makes its vintages highly cherished. The 1945 vintage sells for RMB 249,000. 1946, 1947, 1949, 1956, 1959 and 1967 are other in-demand vintages.
Aside from the rare vertical collections, Shook!’s wine list features 19 Champagnes, including nine vintage varieties. Among the selection are the Dom Pérignon Luminous edition and Dom Pérignon’s Andy Warhol tribute, plus Louis Roederer Cristal from 2000 that received a 96-point rating by Robert Parker's Wine Advocate. Several Champagnes by Armand de Brignac are sold exclusively at Shook!. Champagne prices start at RMB 880 for the Moët & Chandon Impérial, and selected labels are available in Magnum (1.5L), Jeroboam (3L) and Methuselah (6L) sizes.
An extensive selection of wines from across the Old and New Worlds are divided by region and cover a number of price points, starting at RMB 270. All young red wines are decanted before serving to enhance the drinking experience. Two Champagnes and 10 other wines are available by the glass in 15, 25 and 75cl servings. The menu also offers a number of ‘Him & Her’ red, white and sparkling Wine Flights, uniquely arranged with both men's and women's palates in mind. Guests that can guess the Blind Wine of the Day's varietal and region correctly can enjoy the glass on the house.
Shook!’s fine wines and molecular cocktails can be enjoyed in the main restaurant, Time Bar or at The Swatch Art Peace Hotel Terrace that opens at the end of June on the heritage hotel rooftop overlooking the Huangpu River and Pudong skyline.
About Shook!
Shook! Shanghai is the second Shook! restaurant by Malaysian YTL Hotels, after Shook! at YTL’s Starhill Gallery in Kuala Lumpur. It occupies the penthouse floor of The Swatch Art Peace Hotel, a Renaissance-style 1906 heritage landmark on the Bund.
Helmed by Executive Chef Kevin Cape, Shook!’s open culinary theatre comprises four master chefs and four distinct cuisines. The unique menu features whispers of Chinese, Japanese, Southeast Asian and modern Western cuisines, yet is flexible enough to transport you anywhere your heart and palate desires. Signature dishes include Snow white dancing prawns (stir-fried prawns with hot mayonnaise sprinkled with honey-glazed walnuts), Confit of slow-cooked salmon, and Cajun-style seabass.
Along with the mod-Chinoiserie main dining area, there is also the chic Time Bar and The Gallery, a multimedia banquet hall ideal for private receptions for up to 250 people. On the sixth floor, The Swatch Art Peace Hotel Terrace offers alfresco lounging and stunning views of the Huangpu River and Pudong opening at the end of June. The hotel’s two defining domed towers, the Corner Tower and Blancpain Room, are ideal for intimate candlelight dinners. Also on the sixth floor, the Chiang-Soong Room is one of the city’s most historic private meeting rooms. The room, now restored to its original elegance, is the very same venue where the First International Opium Conference was held in 1909. It is also where Chiang Kai-Shek and Soong Mei Ling celebrated their engagement in 1927.
