Between 21 and 26 September 2010, guests of Angelini at Kowloon Shangri-La, Hong Kong will discover the world of authentic Italian artisan pasta and the exclusive “Spinosini 2000 with Omega-3” when internationally known Prince of Pasta, Mr Vincenzo Spinosi, flies in from Italy to create the ultimate pasta experience with his signature handmade, egg-based pasta products. In addition to a range of Spinosi pastas available during lunchtime and a set dinner menu, a special wine dinner menu will be available at Angelini on 24 September, in which guests can relish Mr Spinosi’s pasta dishes alongside a selection of fine wines. Furthermore, on 25 September, Mr Spinosi will join Chef Vittorio Lucariello for a fun and interactive pasta cooking class.
Hailing from the legendary Spinosi family that has been making pasta from as early as 1933 in Campofilone in the Marche Region of Italy, Mr Vincenzo Spinosi is the youngest in the family and the most passionate about his father’s pastas. In 1973, he took over the family business and started to add innovative ideas into making the products. With his devotion and dedication in pasta, Mr Spinosi was dubbed the “Prince of Pasta”, or the “Maccheroncino King”.
Made with only semolina flour and eggs, Spinosi pasta is particularly porous, allowing it to take up a generous amount of sauce. In Italy, egg pastas are commonly made with four eggs per kilo of flour and water. At Spinosi, 10 whole fresh eggs are used per kilo of flour with no water added, which makes a softer pasta that is flavourful while maintaining its texture.
In 2000, the Prince of Pasta created an original pasta product known as “Spinosini 2000 with Omega-3”. Made with 65 per cent of selected hard wheat flour and 35 per cent eggs that are specially enriched as the hens are fed on a diet that contains vegetable oils, natural source of Omega-3 and vitamin E from cold-pressed sunflower oil, the “Spinosini 2000 with Omega-3” is very well liked around the world. Actor Robert De Niro loves it so much that he specifically requested to feature it in his restaurant in Los Angeles, California.
To ensure quality and genuine Spinosi characteristics, Vincenzo maintains a small but pure production of pasta with only 14 employees to make by hand 70 kilos of pasta per hour. This helps explain why the Spinosi pasta is so unique and sought-after.
Mr Vincenzo Spinosi was awarded the Five-Star Diamond Award by The American Academy of Hospitality Sciences. This is of particular significance to Mr. Spinosi, since Italy has only received three of these awards over the years. He is also a proud recipient of the “Grand Official of Italy”, a recognition equivalent to an Italian Nobel Prize.
A special wine dinner will be held on 24 September, Friday, for one night only. Priced at only HK$980 + 10% per person, the five-course dinner starts with Rolled Eggplant filled with Spinosini Pasta, Mozzarella Cheese on Tomato Sauce, followed by Spinosini with Maine Lobster with White Tuscan Beans and Pure Parsley. Other Spinosi specialities include Slow Cooked Blue Eye Cod with Bell Peppers, Anchovies, Black Olives and Spinosini Pasta with Chives, Braised Veal Cheeks served with Spinosini Pasta and Black Truffle, as well as Spinosini Tart with Citrus Cream and Fresh Ribes.
The same dinner menu will also be available between 21 and 26 September, for just HK$680 + 10% per person without wine pairing and HK$1,180 + 10% per person with wine pairing. Spinosini with Jumbo Shrimp and White Tuscan Beans Sauce will substitute the Spinosini with Maine Lobster with White Tuscan Beans and Pure Parsley. For only HK$238 + 10%, guests can enjoy a unique pasta dish prepared exclusively by Mr Spinosi, which is available for lunch only.
Pasta lovers can look forward to discover simple tricks that will help them cook the perfect pasta in the cooking class on 25 September, Saturday, from 9:30a.m. to 12:30p.m. At a fee of just HK$868 + 10% per person, the cooking class includes recipes, a certificate, a glass of Prosecco, lunch and a glass of wine. Angelini Chef Vittorio Lucariello and Mr Spinosi will teach participants how to prepare three pasta dishes: Spinosini with Jumbo Shrimp and Cannelloni Beans, Citrus Tart with Spinosini Pasta and Eggplant Cannelloni with Tomato and Basil Spinosini.
Angelini delivers authentic Italian cuisine using only the finest ingredients of the season, accompanied with an extensive wine list of over 100 Italian wines.
