Guenter H. Richter, General Manager of The Regent Bal Harbour, a stunning oceanfront destination named one of the top 30 hotels in the world by Travel & Leisure magazine, has appointed Mark Militello, a much-acclaimed James Beard Award recipient, as executive chef of the hotel’s culinary operations, including the signature restaurants 1 Bleu and The View Bar. Militello’s menus, which debuted mid-December, showcase his spectacular contemporary American cuisine, which has earned the chef rave reviews and countless honors throughout his career.

The menus, emphasizing clean, contemporary flavors, focus on local seafood, high-quality chops and steaks, organic chicken and local sustainable produce. To introduce diners and Militello’s cuisine a three-course chef’s dinner menu is offered nightly for $35. On the dinner menu, diners can sample starters ($10.00 - $24.00) that bear the Militello imprint such as puree of English pea soup, accented with truffle, apple wood smoked bacon, crème fraiche and minted tomatoes and a tasting of homemade mozzarella and heirloom tomatoes topped with fresh basil, extra virgin olive oil and 3 sea salts.

Freshly made pastas and risottos including wild mushroom risotto with parmesan and crisp pancetta, and a richly satisfying butternut squash ravioli, offered with brown butter, sage and aged parmesan; share menu space with main plates ($20.00-$44.00) including Militello’s trademark crab crusted grouper, served with horseradish beurre blanc atop purple potatoes, zucchini and squash and roasted garlic stuffed beef tenderloin, offered with caramelized sweet onion, polenta cake and root vegetables in a braised short rib sauce. For The View Bar, the chef has designed a menu of small and shared plates to be enjoyed indoors or outdoors on the ocean front patio. Featuring contemporary sandwiches, salads and grilled items, the delightful menu includes a ground beef brisket burger, Key West pink shrimp sliders, Mediterranean mussels and creamy buckwheat polenta with wild mushrooms and truffle, as well as simply grilled fish, chicken and meats prepared with extra virgin olive oil and sea salt.

The exciting dining destination seats 180; 106 inside and 74 on the ocean-view terrace. A destination in its own right, Friday night’s “Cocktail Hour” at The View Bar has quickly become the preferred location for starting the weekend in style with complimentary champagne, hors d’oeuvres and specialty cocktails. 1 Bleu and The View Bar at The Regent Bal Harbour are located at 10295 Collins Avenue, Bal Harbour, Florida, a few blocks north of Bal Harbour Shops.
