Elegant Hotels recreates the Era of Cocktail Kings

The Elegant Hotels Group in Barbados and its famous restaurant Daphne’s return to when cocktail was king – a culture where patrons flocked to establishments for the innovative recipes of charismatic bartenders. Led by chief mixologist Miguel Smith and Daphne’s assistant restaurant manager Marco Alleyne, bartenders across each of the Elegant Hotels Group five properties design fashionable atmospheres where drinks and personalities shake and stir to tantalize tastes.
“Our style is classic international infused with Caribbean soul and the sincerity of change; standards that make the drink the guest of honor at every table,” says Daphne’s chief mixologist Miguel Smith. “We always encourage ‘outside-the-glass’ experimenting, as some of the most remarkable flavors are unplanned.”
Guests staying at the Colony Club Hotel, The House, Crystal Cove Hotel, Turtle Beach Resort or Tamarind Cove Hotel can now benefit from the vast array of cocktails available. The stand-out is Daphne’s, the fine Italian restaurant made famous by its London counterpart, highlighted by international bartending standards, top-class equipment and charming associates.
The 30-strong cocktail list from the Elegant Hotels Group includes a varied selection of martinis to whet appetites, such as Raspberry Fool, Watermelon Martinig, and Apple Strudel – and for after-hours, cocktails such as Bajan Sunset, Ginger Zen and Guava Palava are a fitting end to a sunshine fuelled day. Here are two easy recipes to recreate at home:
Bajan Sunset
1.25oz Vodka
2oz Passion fruit puree
5oz Grapefruit Juice
Juice of half a lime
Dash of Honey
Dash of Grenadine
Build all ingredients in a highball over ice except honey and grenadine. Add grenadine and top with splash of grapefruit. Swirl honey over top. Garnish with orange slice and cherry.
Watermelon Martini
Watermelon chunks
3 oz Vodka
2 oz simple syrup
Shake ingredients vigorously until watermelon has released its water, flavour and colour. Double strain into chilled cocktail glass garnished with watermelon triangle.
With a remarkable 13-year bartending career that includes studies in London, chief mixologist Smith joined Daphne’s in 2002, adding style, technique and improvisation into its impressive bar menu. Famous for his watermelon martinis, Miguel credits his unique perspective to international travels and lists his top ingredients as lime and angostura.
“Timeless execution with a neo-classical flair lets cocktails and characters mingle freely,” says Smith. “Freshness, variety, color, balance and beauty – these rules will always apply, even in the most revolutionary concepts, which earns us respect from discerning drink patrons.”
