Now Chef of the Chakana restaurant in London, he led his former project - Lima restaurant - to its first Michelin star together with Virgilio Martinez and made it the first Peruvian restaurant in Europe that gained this prestigious status. In December, Robert will bring bright colours and tastes of his native country to the very heart of Russia’s capital.
Robert Ortiz grew up near Marañón River in Peru and used to be cooking with his mother and grandmother as a child. He started his career in Costa Verde restaurant in Lima, moved to London where he gained his experience in various restaurants and landmark hotels and then returned to his homeland to reacquaint himself with Peru’s cooking. After his travels Robert ended up in London bringing the flavours and culture of Peru to the tables of local diners. Robert’s food is about showcasing Peruvian cuisine through intense bright flavours, splendid texture combinations and beautiful natural colours arranged on his guests’ plates.
For Quadrum at Four Seasons Hotel Moscow, Robert will prepare his amazing signature set menu but its format will be a little different from the sets the restaurant usually offers. Chef Ortiz will begin his special dinner with starters to share to introduce guests to the classic tastes of Peruvian cuisine: pisco-poached oyster with ginger tiger milk, yellow potato “Causa King Crab,” duck tiradito, sweet and sour oranges with spicy rocoto pepper, and cuzco corn cake with burrata cheese.
Chef will offer guests two main courses: scallops with parmesan that symbolises the coast of Peru and beef pachamanca with curzo corn cake and black quinoa that is associated with the Andes, famous for being rich in cereal and corn. Chef will finish his set with two desserts. The final dish will highlight Robert’s most favourite ingredient of all – chocolate.
“To be honest, I am a massive fan of chocolate,"says Robert Ortiz. "I absolutely love it. It is something that I enjoy every single day. I am from a region where cacao is cultivated, so for me, cacao is just in the air. A humble ingredient with cacao can be transformed into something amazing.”
