Tapas Bar at Kowloon Shangri-La, Hong Kong presents special molecular drinks and international tapas with a twist to unveil the science of deliciousness throughout March 2010.

From the world of molecular mixology, the Mojito Caviar consists of a blend of fresh mint leaves and rum caviar, served in a Martini glass. Furnished with red cherry and pineapple, the Pina Colada Espuma is a concoction of rum, Malibu, coconut milk, pineapple juice and cream milk. Garnished with strawberry margarita jelly, the Margarita Revolution is a mixture of Tequila, Cointreau, lemon juice and strawberry purée. Guests can also indulge in the Alexander Smoothies, which is a combination of brandy, crème de cacao, cream milk and chocolate sauce.

To add a creative touch to a classic dessert, Executive Sous Chef Robin Zavou invents Foie Gras Crème Caramel, a savoury foie gras mousse with caramel crisp. Other tapas highlights include Oysters and Pearls (oyster and caviar); Green Olive Spherical (green olive in herb oil with croutons and olive oil spread); Cauliflower and Lobster (warm lobster jelly with cauliflower purée and caviar); Cockles (cockles coated with lychee jelly, passion fruit purée and crisp cod skin); Foie Gras Espuma (foie gras, bone marrow, toasted brioche and truffle); and Sardine Sardine (light sardine mousse with crisp fruit bread).

Tapas Bar is a wine bar where guests can find a wide selection of New World wines and international tapas complemented with harbour views. Guests can choose to enjoy a glass of wine and international tapas in the comfort of the bar or under the stars in the open air. In 2003 and 2004, the U.S. magazine Wine Spectator honoured Tapas Bar with the Award of Excellence.
