The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali presents a Chilean heritage wine gourmet dinner on Saturday, 11th April 2009. Guests savours the journey beginning at Cascade Bar, located in the lobby level with exotic cocktails and welcomed with Chilean sparkling wine undurraga brut royal and delightful canapés. Thereafter proceed to Mayang Sari Restaurant to enjoy the main event of a collection of finest wines complemented with an impeccable cuisine for only Rp. 999,000 net per person.

In collaboration with Juan Jose Diaz, a renowned wine enthusiast, Chef de Cuisine Bastian Mantey of The Laguna Resort & Spa, Nusa Dua, Bali presents his

5 course signature gourmet dishes featuring a lavish selection of flavours exquisitely matched to the five fine wines from Chile.

The impeccable cuisine complimented with the finest wines are:

Starter
pan seared foie gras, apricot pumpkin salsa, liquourice reduction and black pepper caramel complemented with leyda gewürztraminer 2008

Intermediate
giant scallops with vierge sauce and wine served leyda riesling neblina 2008

Main course
rack and braised leg of lamb, white bean cassoulet, sweet mustard and crisp potato to match Von siebenthal montelig 2005

Cheese
crème brule of goat cheese with beetroot garlic grissini served with von siebenthal carabantes syrah reserve 2007

Exquisite dessert
valhorna chocolate violetine with mango trilogy complemented with von siebenthal carmenère reserve 2007 wine.

The elegant evening closes with all guests being invited to the Nusa Bagus Island under the moonlight amongst lush tropical gardens and blue lagoons to enjoy coffee, liquors and cigars.

Bastian Mantey, Chef de Cuisine of The Laguna Resort & Spa, Nusa Dua, Bali brings with him a wealth of knowledge gained from working in some of Europe’s finest Michelin star rated restaurants. Bastian transfers his innovative and creative talents to the resort ensuring that every meal is a culinary experience, styled to perfection.

Juan Jose Diaz has been a wine enthusiast for the last 10 years. Experienced in the Chilean market as a distributor and currently is the Marketing Manager for Indowines, one of the most important wine importers for Indonesia.
