Reminisce back to visits to a cosy Parisian bistrot along the Seine river and a homely brasserie in the French Riviera with all new menus at ALATi Mediterranean restaurant at Siam Kempinski Hotel Bangkok, serving from 1 April 2022 until 31 July 2022.

ALATi discloses ‘Stories of France’, a flavourful adventure of culinary experiences across the hexagonal country with a striking contrast of classic and contemporary dishes. Executive Chef Carlo Valenziano once again transforms his travels into cooking and aims to give guests an insight into his culinary encounters.

The story sets out with mouth-watering entrées such as ‘Huîtres en Persillade’ – juicy Fine de Claire oysters baked in parsley butter, garlic and crispy croutons; ‘Soupe à l’Oignon’ – Lyon’s traditional, home-style onion soup gratin topped with toasted bread, Comté cheese and black pepper; and ‘Foie Gras Poêlé aux Figues’ – aromatic pan-fried foie gras, fresh figs, fig and port wine coulis and brioche cubes, a go-to dish from Aquitaine.

Chef Carlo’s main-course selection of carefully crafted ingredients include ‘Boeuf Bourguignon’ – tender braised beef in a thick red wine sauce seasoned with aromatic herbs and served with vegetables known to Burgundy; ‘Porc à la Moutarde’ – Kurobuta pork loin tucked under mustard sauce and braised cabbage jam native to Dijon; and ‘Sole Meunière’ – imported whole lemon sole cooked with butter, lemon juice and capers renowned in Paris. C'est délicieux!

Top it all off with a selection of French pastries known in the regions of Provence and Camargue, crafted by the one-and-only French Executive Pastry Chef Franck Istel. Indulge in ‘Clafoutis aux Abricots et Cerises’ – a warm cake sprinkled with apricot and cherries, strawberry sorbet and caramelised pistachios; ‘Éclair à la Vanille et Fruit Rouges’ – vanilla cream, fresh berries, raspberry sauce; and ‘Fondant au Chocolat’ – succulent 70% chocolate, caramel sauce and vanilla ice cream.
