After winning the coveted Michelin Star at the gourmet restaurant “Gusto by Sadler” at the Baglioni Resort Sardinia, he arrives in Venice in the renovated setting of the Baglioni Hotel Luna, just a stone’s throw away from Piazza San Marco.
An ongoing quest for harmony, simplicity, lightness and sustainability: this is the culinary philosophy of Chef Sadler who, together with Resident Chef Gennaro Balice, has designed the new menu of the exclusive “Canova Restaurant by Sadler”.
The cuisine on offer at the restaurant is a skilful and sophisticated balance between tradition and innovation; a delicate balance between fidelity to the origins of regional Italian cuisine and reinterpretations inspired by the creativity and artistic sensitivity of the chef.
Among his signature dishes are mullet gratin with caponatina, sweet potato and Venetian broth, and fresh butter pasta and fermented sage, with baby squid and hazelnut flavouring.
To complement the updated gastronomic offer of Serenissima’s oldest hotel, there is also the Canova Bistrot, where you can taste the classics of Italian regional tradition served in a more informal environment.
Finally, the Canova Bar — which has been recently restyled to feature a large counter, tables with burnished brass inserts and armchairs covered with classic Rubelli fabrics — is the ideal location for sipping a great coffee or indulging in an aperitif before dinner.
