Paulaner Bräuhaus is unveiling its new overhauled menu with more than 40 new dishes in May 2020, featuring an array of new items. Fresh salads, more family-style platters and modern twists on traditional German food are just the beginning. Beer is incorporated in many of the dishes and is proof of a new concept that sees beer not only as an end product but an important ingredient that can provide both familiar and surprising tastes. For over 27 years, Kempinski Hotel Beijing Lufthansa Center’s Paulaner Bräuhaus has served up Beijing’s award-wining Bavarian cuisine and freshly brewed Paulaner beer. ‘This is the largest menu adjustment in the past five years at Paulaner Bräuhaus,’ said Brice Péan, Managing Director of the hotel. ‘We continually innovate the classics. I believe with the creative seasonings and more photogenic and modern plating, plus our brand-new beer cocktail selection, Paulaner will bring a refreshing experience to all our guests, especially the demanding younger generation.’Presenting the Bavarian ClassicsGuests will be able to find classic dishes from throughout northern and southern Bavaria in the new menu. One of the chef’s recommendations is the Lachs-Butterspätzle, which consists of pan-fried noodles covered in cream sauce enriched with capers and smoked salmon. Chef Andreas is also especially proud of a long-lasting family recipe, from northern Bavaria, which takes over a week to complete. Fränkischer Sauerbraten is a Franconian braised beef made with grape juice, savoy cream and fried bread dumplings. ‘This is one of the traditional Bavarian dishes, from my hometown of Stadeln (Franconia). Having this dish for Sunday lunch is one of my favourite childhood memories,’ Andreas said. ‘This dish is extremely complicated, and the cooking process takes a very long time. The recipe was taught to me by my 80-year-old grandmother, so it is a very meaningful dish to me. The whole cooking process takes ten days as just the marinating process of the beef lasts for a whole week. As the old German saying goes, “Good things take time”.’ Innovating Bavarian CuisinePaulaner’s Head Chef Andreas, a German national with more than 15 years of experience living in China, saw the need for his restaurant to adapt to Beijing’s ever-changing dining atmosphere and to take old German classics and present them in a new and more modern light. ‘After being introduced to the Chinese food and beverage culture, I found that Chinese guests love to share meals together. From Peking duck to hotpot, these dishes are made to be shared, and, after all, sharing is caring.’
Many of the dishes, from salads to platters, have also been adjusted to sharable sizes to better serve the locals. Guests can expect a sumptuous seafood platter of Salmon, Trout, River Perch and Scampi skewers with the chef’s secret-recipe Rémoulade sauce upon ordering Paulaner Fisch Pfanderl, while the grill platter Paulaner Grillpfanderl allows guests to enjoy Angus beef, grilled Pork necks, Lamb chops, Chicken breast and a mixed sausage skewer with sides of baked potato and grilled corn with Paulaner-made barbecue sauce. ‘We have added a lot of dishes that local guests will love. However, this does not mean a combination of Chinese and Western cuisine,’ Chef Andreas emphasised. Whether it is seafood or barbecue, it is an authentic Bavarian flavour. The larger variety allows everyone to find a dish they will like and gives customers more choice when sharing in larger groups.Invite the Vegetarian Out ‘I noticed guests also pay great attention to nutritional balance, so I wanted to incorporate dishes which reflect that.’ Chef Andreas is amplifying the interest in introducing healthy options. For mushroom lovers, there are a variety of options, from the Rahmpilzragout mit Brezenknödeln, a ragout of creamy mushrooms served with pretzel dumplings, to the Pikante Champignon-Paprikagemüsepfanne, sautéed champignon mushrooms and bell pepper topped with a piquant homemade tomato sauce. Meanwhile, salad lovers also have a variety of newly introduced entrées, especially the Vitalitäts Salat, a mixed green salad topped with nuts, kernels, crispy pretzel croutons and our house-made Paulaner wheat beer dressing. Another seemingly ordinary dish is the Waldpilzrahmsuppe, a creamy mushroom soup, but this new addition has some hidden secrets of its own. The head chef selected three different types of mushrooms to include. By combining different mushrooms and gently frying them, the taste of this soup is richer and creates a distinct aroma only possible through the use of quality and fresh ingredients.No Longer Just a Beer At Paulaner Bräuhaus, beer can be enjoyed not only in a glass but throughout the menu. Used as an important ingredient, it enhances many items, such as our gourmet barbecue sauce, beer syrup, beer-roasted meats and so much more. Chef Andreas is an expert at cooking with beer. Throughout the menu, he devised a way to incorporate Paulaner’s freshly brewed beer into the authentic recipes. The onion ring stack, called Zwiebelringe im Bierteig in German, is the chef’s recommendation. It combines Paulaner’s fresh ingredients and is served on the neck of a classic Paulaner beer bottle. ‘Onion rings can be found everywhere, but Paulaner’s onion rings are so different from what you have eaten in the past!’ Chef Andreas elaborates. ‘I added Paulaner’s homemade wheat beer because it amplifies the subtle onion aroma, bringing out a richer flavour, while creating a crisp outside and tender inside. Pair it with Paulaner’s original Beer Mojito and you have created an excellent summer combination to enjoy on our terrace. ‘I’m proud because all the ingredients used by Paulaner are homemade. We brew our own beer in-house, bake our own bread and even make our own sausages. We believe that the quality of each single ingredient, as well as the care we put into each, is what sets us apart from other restaurants,’ said Chef Andreas.Rich Desserts and Creative Cocktails Paulaner Bräuhaus’s restaurant manager and chief bartender, Sascha Sommerschuh, has crafted the first-ever Paulaner beer cocktail list. ‘All the new drinks are unique and innovative and will surprise even those who usually don’t like beer. Our approach was to create a variety of cocktails that use all three different beer types we have on tap. The next step was to create a list that will have everything, from sour to sweet and from light to strong,’ said Sascha. The beer cocktails range from twists on classics, such as the Paulaner Beer Mojito or the Paulaner Old Fashioned, to completely new ideas, such as the U-Boot, combining Paulaner’s Dark Lager with another German favourite, Jägermeister.
The beverage menu has been completely reworked, featuring new non-alcoholic cocktails, schnapps cocktails, Paulaner homemade lemonade and a soon-to-be customer favourite: the bear catcher. The bear catcher is a traditional German-style beer schnapps that combines beer, schnapps and honey. As Sascha explained, ‘It is one of my first drinking memories of Germany. This combination is very smooth, easy to drink and not overly strong and has a subtle aromatic hint of honey that lingers on and makes you want more.’ In addition to these crafted drinks, Paulaner Bräuhaus also added some sweet dessert options perfect for the summer season ahead, including a 1-Meter Dessert Variation containing all of Kempinski’s most popular German classic desserts, from Black Forest Cake to German Apple Strudel. Another sweet addition is Paulaner’s Chocolate Cake, which is silky smooth with a rich flavour and the dish of choice for all those with a sweet tooth. The perfect treats to enjoy on the Paulaner Terrace this spring and into summer.
