Nestled within the five-star hotel, featuring luxurious Japanese art and décor, the sushi restaurant offers exquisite seasonal delicacies while providing world-class hospitality to The Peninsula Tokyo’s discerning guests. The exclusive restaurant is operated by Wa Creations and helmed by two Michelin-starred Chef Rei Masuda, a disciple of world-famous Sushi Master Jiro Ono of Sukiyabashi Jiro, under whom Chef Masuda honed his techniques. Sushi Wakon at The Peninsula Tokyo is sister to the original sushi restaurant of the same name at the Four Seasons Hotel Kyoto.

The opening of Sushi Wakon enables the Peninsula to continue its long tradition of providing unique dining options and forging The Peninsula Hotels’ reputation as destinations of culinary excellence,” says Sonja Vodusek, General Manager of The Peninsula Tokyo. “It’s a welcome addition to our culinary collection and ensures guests can experience true Japanese cuisine.”

Under the supervision of Chef Masuda, Sushi Wakon’s expertly-crafted sushi uses ingredients sourced daily from the world-famous Tsukiji Market, allowing guests to experience the finest fresh seafood. The omakase course will flow through a series of tsumami small dishes and nigiri sushi, prepared using traditional Edomae-style techniques designed to bring out the sublime flavors of each fish. Great care will be taken to ensure that the condition of the fish is maintained, and the same meticulous care will extend to the sushi rice; with Chef Masuda selecting water from Mie Prefecture. Special sake pairing courses will also be made available, featuring products from Japan’s most renowned breweries.

Chef Masuda comments, “I am delighted to open Sushi Wakon in this pristine location at The Peninsula Tokyo, the epitome of an international luxury hotel, and to share my life-long passion for sushi through an exceptional and memorable dining experience by introducing a carefully crafted authentic menu to international guests from around the world.”

Located on the fourth floor of The Peninsula Tokyo, Sushi Wakon seats a total of 20 guests with eight seats at the main counter, six seats in a private dining counter, and six seats in a private dining room with a table. The restaurant is designed to fully embrace Japan’s local aesthetic and elegance, and will feature handcrafted Hinoki counters and artwork by some of the country’s greatest pottery masters.

Lunch is available daily from 11:30 am to 2:00 pm, and the restaurant offers two dinner seatings, from 5:30 pm / 6:00 pm to 8:00 pm, and 8:30 pm to 10:30 pm. For lunch, three sushi courses are offered (JPY 18,000 / JPY 23,000 / JPY30,000), while for dinner, guests may choose from two full omakase (chef recommendation set menu) experiences featuring seasonal appetizers, nigiri sushi, soup, and dessert (JPY 23,000 / JPY 30,000). All prices are subject to 8% consumption tax and 15% service charge.

About Chef Rei Masuda:

Chef Rei Masuda was born in 1980 in the city of Kokura in Fukuoka, Japan. Masuda’s passion for sushi began in high school, when he worked part time for three years at a renowned local sushi restaurant, Tenzushi. This inspired him to pursue a culinary education at the Kitakyushu Academy for Cooks where he studied Japanese cuisine. Upon graduation, Chef Masuda mastered the fundamentals of Japanese cuisine working for four years at the Japanese restaurant Mansou. With the dream of becoming a sushi chef, Masuda decided to relocate to Tokyo to learn authentic Edomae-style sushi. Upon arriving to Tokyo, he visited more than 40 restaurants over a period of months before deciding to apply to work at the legendary sushi restaurant Sukiyabashi Jiro, famously featured in the acclaimed documentary, “Jiro Dreams of Sushi.” After nine years of working at Sukiyabashi Jiro, chef Masuda opened his own restaurant in 2014, the eponymous Sushi Masuda in Tokyo’s Aoyama neighborhood. The restaurant is currently recognized with two Michelin stars in the Michelin Restaurant Guide. In 2016, Chef Masuda opened his first branch restaurant, Sushi Wakon, at the Four Seasons Hotel in Kyoto. The restaurant has been awarded one Michelin star in the 2018 Michelin Restaurant Guide.
