On Thursday, September 27, 2018, Four Seasons Hotel Ritz Lisbon will be the stage for an exclusive gourmet performance. Honouring Executive Chef Pascal Meynard’s French roots and the world-class vines and viticulture of Château Margaux, the City of Seven Hills presents a unique menu of seven courses, perfectly paired with four Margaux wines.

Thibault Pontallier, Global Ambassador for Château Margaux – and son of the estate’s legendary winemaker for more than two decades, Paul Pontallier – will be co-hosting the evening with event organiser Sylvie Marques Martine, Director of Vinitrust, in a rare chance to discover estate anecdotes and its celebrated savoir-faire.

The Chef: Thrill-seeker and ocean-lover, Executive Chef Pascal Meynard grew up in France’s Basque region. From Michelin-starred restaurants in Paris to rugged Tasmania and the remote Canadian Rockies, his adventurous spirit and passion for the great outdoors has defined his career: always seeking new techniques, products and innovations to inform and inspire his culinary creations.

The Menu: Guests may expect French fine dining at its classic and intangible best, including blue lobster poached on green cardamom butter with Combava emulsion; roasted pigeon, girolles and truffle condiment; and saddle of lamb, barberries and Mondolkiri pepper. There will be a selection of French cheese, pink grapefruit with Timut pepper pre-dessert and a hazelnut chocolate, figs confit, yogurt glacé cream dessert by Pastry Chef Fabian Nguyen.

Château Margaux: Few vineyards can boast five forward-looking centuries of history and excellence. Epitomising the art of winemaking, Château Margaux’s superior terroir, tannins and talents make beholding – and sipping on – their wines an act of beauty.

The Wines: A unique opportunity to sample four of the estate’s finest wines: Pavillon Blanc 2015; Chateau Margaux 1996 and 2004; and Pavillon Rouge 2009. One of the great vintages of Pavillon Blanc, the nose of the 2015 is aromatic and complex, round on the palate and finish. The greatness of the Pavillon Rouge 2009 lies in its wonderful balance and amazing delicacy of its concentrated tannins.
