Having successfully concluded the Michelin events, Taj Hotels Palaces Resorts Safaris, the proud purveyor of global cuisine for over a century -- has for the very first time collaborated with Ducasse Education to impart the art, techniques and trends of classic French Culinary & Patisserie making through a series of hands on masterclasses for passionate individuals and industry professionals. Ducasse Education, created by the multi-starred Chef Alain Ducasse, is a prestigious network of schools specializing in cooking and pastry arts. With its three campuses in France, the institution aims to extend its expertise accumulated over decades to gastronomy enthusiasts.
As part of this masterclass collaboration, an intensive workshop will be held at The Institute of Hotel Management (IHM), Aurangabad, where chefs across the Taj and industry professionals will update their skills. A world-class centre in hospitality education, IHM Aurangabad is an alliance between the Maulana Azad Educational Trust and the Taj Group. Two other workshops, one each in Mumbai and Delhi, will follow.
The Delhi workshop at Vivanta by Taj at Dwarka will train Taj chefs in the best of classic French fare using the Ducasse Education philosophy. The Masterclass in Mumbai has been exclusively designed to initiate passionate Mumbaikars into French pastry arts and will offer personalized interaction between Ducasse Education experienced chefs and participants. All sessions will teach the art, technique and trends of pastry making.
The objectives of these master classes are for professionals to master techniques to perfection, achieve balanced tastes and reach excellence. It will enable participants to acquire transversal skills such as work, produce and visual optimization for improved efficiency and productivity. It will ultimately open opportunities for participants to adapt menu offerings to different clients and differentiate oneself from competitors.

The Mumbai Masterclass will be conducted on 8th and 9th June 2017 at Callebaut Academy, Mumbai, and focus on pastry arts. The Delhi workshop – scheduled for 20th and 22nd June 2017, at Vivanta by Taj Dwarka, New Delhi – is designed to delight professional chefs with training, trends and insights on French food.
To be conducted by celebrated chefs Franck Geuffroy and Jeremy Delteil, the workshops will focus on basic pastry techniques, ice-creams and frozen entremets, chocolates, bars and bonbons and a delectable range of French tea time delicacies including Lemon Tartlets, Madeleine, Panna Cotta, Peanut and Pecan Paris-Brest, Chocolate/Coffee Eclairs, Chocolate Tartlets, Fresh Summer Fruits Tartlets, Lemon Cake, Strawberry Waffles, Traditional Macarons, and Yellow Fruit Financiers.
