Learn the art of Italian cuisine at Solo Italian Restaurant & Bar, with the launch of cooking masterclasses led by Executive Chef, Doxis Bekris. Taking place every Saturday from 28 January to 4 March 2017, each action-packed class will focus on a different style of Italian cuisine. If your New Year’s Resolution is to develop your cooking skills, or if you have always wanted to know how to make your own fresh pasta, gnocchi or pizza dough from scratch, now is your chance!
 
Chef Doxis will be leading the classes and teaching attendees how to prepare a variety of delicious Italian dishes, as well as demonstrating culinary skills and techniques, in a fun, interactive afternoon behind the scenes in the Solo kitchen. At the end of the masterclass, sit down with your fellow foodies for a private meal in the Solo restaurant with Chef Doxis, and enjoy the tasty meal you have prepared.
 
Solo is a home-grown Italian Restaurant & Bar, serving a true taste of Italy in a relaxed and convivial atmosphere. Signature dishes of fresh meat, seafood, pasta and pizzas are baked to order in the authentic Italian wood-fired oven, and all the dishes, from the bread, right through to the sauces and the pastas are freshly made in-house.
 
Cooking Masterclasses at Solo
·         28 January – Gnocchi Three-ways
Who can resist fresh, handmade gnocchi? You will learn to cook your own melt-in-the-mouth Italian dumplings in this technique-driven masterclass. Chef Doxis will show you how to create three different variations of gnocchi – traditional potato, semolina and ricotta (gnudi) – along with three perfectly paired sauces.
 
·         4 February – Winter Flavours
Take your culinary skills to the next level as Chef Doxis and the expert Solo team will demonstrate how to cook an impressive three-course Italian menu using the best of seasonal produce. Together you will make an authentic creamy squash risotto with parmesan, pan-roasted chicken with sage jus, and for dessert, a tasty twist on apple pie. You will master techniques and tips from the professional chefs in this interactive session.
 
·         11 February – Valentine’s Menu
A romantic dinner in Tuscany—no passport required! In this hands-on class, you will learn to create bold, authentic Tuscan dishes bursting with seasonal flavours to share with your loved one. A unique and fun date activity, or why not put the skills you develop at the class into practice at home and prepare a romantic three-course meal for Valentine’s Day? Solo’s expert chefs will demonstrate the techniques to make roasted tomato and olive crostini, creamy polenta with pecorino and wild mushrooms, and how to cook the perfect steak.  You will practice making pastry dough to prepare a spiced pear crostata dessert, to end your date on a sweet note!
 
·         18 February – Perfect Pasta
If you have always wanted to know how to make your own handmade, fresh pasta, this practical class will teach you the secrets! Chef Doxis will share his tips on how to make great pasta dough every time, and together you will transform seasonal ingredients into tasty ravioli fillings, and go through the steps to prepare delicious sauces to complement the pasta. You will learn to make two types of fresh, filled pasta: spinach and ricotta ravioli with tomato and pancetta sauce, and gorgonzola ravioli with wild mushroom cream sauce.
 
·         25 February – The Art of Antipasti
If you enjoy hosting and like to throw a party, this is the class for you! Impress your friends with a platter of appetising, homemade antipasti as this masterclass will teach you how to make a variety of Italian small plates including crostini with homemade fig jam and gorgonzola, prosciutto wrapped shrimp with salsa verde dipping sauce, and pizzetas with burrata and sweet pepper confit. You will learn how to make your own pizza dough as well as advice to improve your cooking skills and techniques.
 
·         4 March – Italian Classics
Understand how to layer flavours and to season like a professional in this hands-on masterclass. You will hone your knife skills and practice techniques from searing and sautéing, to simmering and braising. Together with Chef Doxis and the Solo chef instructors, you will prepare three delicious, traditional Italian classics; veal ossobuco, chicken cacciatora, and giambotta vegetable stew.
 
Cooking Masterclasses at Solo are priced at AED 300 per person (inclusive of soft drinks) and run from 11.30am to 2pm.
