Abbaye de Talloires, member of Great Hotels of the World in the French Alps, has recently appointed Georges Ringeisen as the property’s new head chef. Ringeisen was born in Alsace into a farming family. His cooking reflects a real love for nature and the changing of seasons, embracing locally sourced products. Ringeisen will implement a new concept for the property’s recently opened brasserie La Table de Cézanne, serving traditional French lunches prepared with local ingredients. From mid-June guests can also enjoy dishes on the terrace next to the lake, prepared in the hotel’s outdoor kitchen. For dinner, the more formal restaurant Aux Jardins des Délices serves simple yet inventive dishes that are combined with an exotic touch.
Using aromatic herbs from the Abbaye’s herb garden and local plants, Ringiesen gives guests a unique gourmet experience. Accompanying him is knowledgeable sommelier Charly who will suggest wines from the historical wine cellar of Abbaye. The menu will be changed according to the seasons and the brasserie menu will change every 14 days. Highlights from the spring menu include, pan-seared scallops in a hazelnut crumble with lime emulsion and fillet of Charolais beef. Cooking courses with Ringeisen will also be made available as well as wine tasting sessions with the sommelier.

Londa Hotel appoints new Executive Chef at its Caprice RestaurantGreat Hotels of the World’s member property Londa Hotel in Cyprus has recently welcomed new Executive Chef Giovanni Caracciolo to its Caprice Restaurant. Caracciolo has previous experience at La Scala Opera House in Milan, and will bring a renewed and refreshed menu that remains traditionally and authentically Italian. New additions include dishes such as aubergine soufflé with caprino cheese fondue and sautéed langoustine in basil, ravioli with bufala, butter and marjoram on a cream of pistachio, and chicken breast in a sweet and sour sauce with pine kernels, raisins and fresh spinach. Pasta and risotto favourites are not forgotten – the risotto a la Milanese is just an example of one of the classics on offer.

Gloria Hotels & Resorts welcomes Michelin-starred chefsFrom May to September 2013, Great Hotels of the World members Gloria Hotels & Resorts will be running a ‘Stars Closer than Ever’ event. Gloria Serenity Resort will host renowned worldwide chefs at Le Jardin au Printemps á la carte restaurant. Columbia Beachotel introduces ‘Bay Club’ all-inclusive offeringGreat Hotels of the World is pleased to announce that member hotel, Columbia Beachotel in Cyprus, has introduced a new ‘Bay Club’ package offering for its guests. Pentelikon Hotel & Suites opens new Argentinean restaurantGreat Hotels of the World is pleased to announce that member property Pentelikon Hotel & Suites in Greece has recently opened Buenos Aires restaurant, focusing on sumptuous Argentinean cuisine. The restaurant has taken the place of the property’s renowned Vardis Restaurant, which was the only restaurant in Greece to be awarded a Michelin star for seven consecutive years. Harry Vardis and chef Ilias Skoulas have created the new restaurant to offer an authentic Argentinean environment with flavoursome, high-quality dishes. All the cuts are grilled on an Argentinean grill and salted with Maldon sea salt flakes. Chef Ilias only prepares his dishes with the finest ingredients, each carefully chosen. Dishes on the menu include the renowned Black Angus beef from Argentina, patatas del Delmonico (roasted potatoes in milk, parmesan and herbs), and the ‘plato del Chef’, which will be announced by chef Skoulas each day.
