Chef Lim fashions modern cooking cuisine that complements Trump Soho’s luxurious ambiance and draws from his extensive experience cooking at some of the finest establishments in New York and Las Vegas.One of Lim’s strengths is his ability to blend cuisines and cooking styles, a talent that is often leveraged at elegant Trump Soho weddings. He enjoys creating unique pairings and dishes that reflect couples’ cultural backgrounds. Lim often cooks with fresh ingredients from the hotel’s rooftop garden, including basil, chive, cilantro, oregano, rosemary and sage. For example, the skirt steak with chimichurri sauce,a signature in-room dining dish, incorporates the garden’s parsley and oregano.
Chef Lim is a graduate of The French Culinary Institute where he specialized in classic French cooking. Lim began his career honing his skills on food flavors, blending and ingredients, and has since gained 10 years of additional culinary experience. Upon completion of his culinary training, Lim went on to work with acclaimed chefs includingMichael Mina, Todd English and Julian Serranoat The Bellagio Resort and Casino; Chef Carla Pellegino at Rao’s; and Le Cirque,a renowned traditional French restaurant in New York City.Lim joined the Trump Soho team over two years ago as executive sous chef where he was responsible for food menu planning in all outlets and for training of all new and current line associates. He has since developed his expertise, incorporating his education and knowledge to create elevated and unforgettable dining experiences at Trump Soho.
A native of Jamaica, Lim began his culinary interest as a young child watching his mother and father cook authentic Asian cuisine at home. He often found himself assisting friends and familywho owned restaurants, and aspired to one day apply that knowledge to a career of his own. In Chef Lim’s spare time he enjoys snowboarding, traveling and attending food tours.
