Chef Valentino began his professional career in Imola, Italy, under the direction of one of the greatest Italian chefs, Nino Bergese, at Ristorante San Domenico. To foster his passion of knowledge and explore other gastronomical cultures, he apprenticed at some of the most distinguished and Michelin-starred restaurants in France and the United States, including Auberge de I’lle, Troisgros, Madame Point and Vergé. His culinary expertise allowed him to collaborate with establishments such as Ristorante Donatello in San Francisco, Restaurant La Main à la Pâte in Paris and Palm Bay Hotel in Miami, where he utilised his diverse techniques and acted as a consultant for these kitchens.
Now the co-owner and executive chef of the Michelin two-star Ristorante San Domenico, Chef Valentino is dedicated to continuous innovation and renewal while conserving solid roots in Italian culinary traditions. He insists on using the freshest ingredients available with great respect for simple preparation.
Foodies, gourmets and casual taste-seekers alike can indulge in a meal co created by Chef Valentino and Chef Marco, who will interact with guests throughout the evening. Guests can opt to have a three-course, four-course or five-course dinner menu. The fine dining journey will begin with Ginger Marinated Red Shrimps with Citrus Flavoured Extra Virgin Olive Oil or Buffalo “Blanc Manger” with Tomato and Bell Pepper Stew; and Seared Goose Liver Escalope with Crispy Leek and White Celery Fondue or Lobster Tail with Green Pea Cream and Caramelised Treviso Chicory. Diners can also look forward to Ravioli filled with Egg in “San Domenico” Style with Sweetened Parmigiano Truffle and Nut Butter or Toasted Onion Risotto and Gravy Caramelised with Marsala Wine and Sugar Cane. For the main course, guests can choose between Dover Sole Fillet with Artichoke in Mint Flavoured White Wine Sauce, and Veal Medallion with Black Pepper Sauce and Raisin. Guests can end the meal on a sweet note with Warm Babà in Rum with Chocolate Ice Cream or Dried Fruit Cassata with Wild Berries Sauce.
The three-course dinner menu is priced at only HK$780 per person, the four-course dinner menu is priced at just HK$880 per person, and the five-course dinner menu is priced at H$980 per person.
