Benchmark Hospitality International, a leading U.S.-based hospitality management company, has appointed Peter Birk executive chef for Hotel 1000, located in Seattle, Washington. Hotel 1000 is part of Benchmark Hospitality’s collection of Personal Luxury Resorts & Hotels. Denny Fitzpatrick, general manager, made the announcement.

“It is a pleasure to welcome Peter to Benchmark Hospitality and to Hotel 1000,” said Mr. Fitzpatrick. “He brings important experience in cooking Northwestern Cuisine to his new role at our property and within our restaurant, BOKA Kitchen + Bar, and we look forward to his leadership in helping ensure our ongoing goal to make every guest experience exceptional.”

Peter Birk was most recently executive chef for Harborside Restaurant & Bistro, located on the waterfront in Seattle's South Lake Union neighborhood. Chef Birk helped open the popular restaurant. Prior to this, he held the title of executive chef at Ray's Boathouse in Seattle for five years after being promoted from chef de cuisine.

Over the duration of his three-decade career Mr. Birk has traveled extensively, studying various cooking techniques and culinary teams of well-known restaurants throughout the Pacific Northwest, as well as in Los Angeles, Salt Lake City, Bozeman and Kansas City.

Chef Birk attended the Western Culinary Institute in Portland and interned at the Ritz-Carlton on the Plaza, Kansas City. He is active with a number of Seattle-area charities, including Auction of Washington Wines, FareStart, March of Dimes and Long Live the Kings. Birk resides in Seattle.
