Executive Chef Richard Green of The Ritz-Carlton, Doha announces the appointment of Chef Ricardo Acquista as chef de cuisine for Porcini Restaurant. Chef Acquista oversees the daily culinary operations in Porcini kitchen. He also works closely with the executive chef in developing menus and creating themed events for the restaurant.
Ricardo Acquista brings a wealth of experience to Porcini not only in Italian cuisine, but in many other cuisines from around the world. Ricardo has traveled throughout the world including Argentina and Europe where he honed his culinary skills amongst others in Tarifa, Seville and Granada. Throughout his travels, Ricardo has worked for a number of highly acclaimed restaurants including Hacienda Benazuza, El Bulli Hotel in Sanlucar la Mayor, Spain, a two star Michelin restaurant, as well as for the prestigious El Bulli restaurant in Barcelona, Spain, a three star Michelin restaurant. Chef Acquista began his culinary career in Rosario, Argentina, where from 1997 to 1999 he was appointed Assistant Professor of cooking classes at Colegio Gato Dumas.
“I would like to create a culinary journey for our guests during which it will be possible to enjoy the transition between the different aromas, scents and textures of the dishes, each with its own unique highlights, resulting in a surprising and exciting dining experience”, says Ricardo Acquista.
Ricardo’s passion behind his cooking is the connection he finds between the hand, heart and mind and being able to discover new tastes from different ingredients and cuisines from around the world. Mediterranean cuisine is Ricardo’s most desired cuisine as this is where his passion for cooking originated. Influenced by the ingredients and traditional dishes from Italy, he is able to incorporate this into his current cooking techniques as well as what he has taken from his culinary journeys around the world.
