Executive Chef Moon Kyung Soo helms Mikuni’s fabled kitchen. With an epicurean philosophy based on extracting the most out of every ingredient, his creations pay homage to the rich history of Japanese cuisine with flair and artisanship. Deep-knowledge in preparation and proper tools are paramount for the 36-year old culinarian. For him, these are the great equalisers of all cuisines, regardless of origin.

Chef Moon’s philosophy relies heavily on century-old Japanese culinary techniques and practices, which is deeply reflected in his dishes particularly in his signature Edomae Nigiri style sushi. “In creating authentic Japanese sushi, I focus on process and methods used by sushi chefs 140 years ago.

Ingredients such as sushi rice must be prepared with exact precision and must not contain sugar. A traditional Edomae sushi maintains a perfect balance in terms of the size of the fish and the volume of the rice to be used. The soya sauce must enhance the ingredients and must be customised to achieve optimum flavour,” said Chef Moon.

Although his culinary pedigree is deeply embedded in traditional Japanese style, Chef Moon is also an ardent follower of modern molecular movement in gastronomy. His signature Octopus Kari Kari Tempura is a reflection of his versatility as a Chef. This dish highlights his deft in juxtaposing two divergent cooking styles (traditional and modern). He vacuum seals the octopus meat and slow-cooks it for 30 minutes in precise temperature using sparkling water (Sous-vide style), before deep frying it to perfection. This technique does not only redefine the texture of the ingredient, creating a crispy coating that envelopes a juicy, tender core, but also produces more succulence for the meat. “Each ingredient has a unique character that must be respected and it is my commitment to maximise and utilise them the best way possible,” he added.

Chef Moon who has cooked for the royal family of the United Arab Emirates, and has served his masterfully-crafted sushi for Hollywood A-listers, an international football superstar and his fellow Korean – Rain, brings with him a wealth of knowledge and over 16 years of experience in Japanese culinary arts. Born and raised in Seoul, Korea, Chef Moon was most recently the Head Chef of “Hashi” Japanese Restaurant at the Armani Hotel Dubai and was also the former Chef de Cuisine of the Japanese “Fazaris” Restaurant at The Address Hotel in downtown Burj Dubai as well as the former Head Sushi Chef of Ariake Japanese Restaurant at The Shilla Hotel Dubai, which is amongst the leading hotels in the world.
