Soneva Fushi by Six Senses, the luxurious castaway fantasy in the Maldives, hires Michelin-starred chef Bjorn van der Horst as the resort’s new Executive Chef. US-born, UK-based van der Horst will be overseeing the culinary developments at Soneva Fushi and will particularly focus on creating distinctive and unique dining experiences for the island's three primary dining locations:
· Ever Soneva So Down To Earth: the resort’s main restaurant will be transformed with a brand new concept of northern Mediterranean cuisine that places the emphasis on informal, family-style dining. Guests will be encouraged to order from a selection of mezze dishes for two, three, four or more people – think summer family meals in the Provençal hills with whole chickens, fish, shoulders of lamb and bouillabaisse. Meals will be served in a new Maldivian champa (hut), which will seat 120 guests with an open kitchen and high ceilings. This exciting new style of dining is schedule to be launched at the end of August.
· Fresh in the Garden: the resort’s fine dining restaurant is now focusing on modern Maldivian cuisine – timeless recipes handed down from generation to generation translated into contemporary dining using modern cooking methods and presentation techniques – with a sprinkling of Sri Lankan and Southern Indian flavors. The aim is to source 90% of all ingredients from the organic garden and other islands in the archipelago, and the idea is to create a genuinely carbon neutral gastronomic experience, a true reflection of the Maldives.
· By the Beach: Starting in September, the resort will offer an exciting Asian tapas adventure. From a vast menu of ‘formulas’, diners will be able to choose five, seven or nine dishes with typical tapas-size portions, accompanied by a complimentary list of wines and sakes by the glass, making it a wonderful opportunity to linger and enjoy bold, mouth-watering flavors with feet firmly in the sand.
Bjorn van der Horst will also spearhead plans to include a new beach champa, revised in-villa menus and an ayurvedic menu on the turtle champa.
Prior to joining Soneva Fushi, van der Horst has plied his trade across the world in some of the world's finest restaurants including Eastside Inn, La Noisette and The Greenhouse in London - the latter two of which gained Michelin stars during his tenure – and Gaia, Picholine (2 stars) and the Russian Tea Rooms in New York. He spent his apprenticeship in France in the kitchens of Paul Bocuse and others, developed his skills in the restaurants of the renowned Alain Ducasse group and also worked with Gordon Ramsey Holdings.
