Accomplished Global Chef Jack Yoss Named as Chef de Cuisine

W Retreat & Spa Bali-Seminyak today unveiled details for the new retreat’s Pan-Asian inspired restaurant, Starfish Bloo with Chef Jack Yoss named as Chef de Cuisine. Located in the uber-cool beachfront enclave of Seminyak, the region’s third W Retreat & Spa recently opened its doors in March 2011.

A casual, elegant seaside restaurant open for lunch, brunch and dinner, Starfish Bloo overlooks seductive views of the Indian Ocean. Designed by Poole Associates Private Limited, Starfish Bloo’s design was inspired by seaside décor and features oversized booths evoking gigantic lobster traps, tanks of undulating kelp, blue starfish pillows, and weather-beaten timber finishes. Columns are clad in blue resin rise in a stylized starfish shapes.

With no reservations for being honest, provocative and bold, Chef Jack Yoss shares his creative culinary vision – a reflection of his days as a globe-trekking chef. From exquisite “raw, rare and naked” appetizers to adventurous main courses – his luxurious Pan Asian-inspired menu echoes a wide range of influences from working with street hawkers in Thailand to serving as a chef de cuisine for the W brand hotels across the world. His global experience perfectly blends the traditional fare of the region with adventurous twists.

Guided by his commitment to creations that capitalize on the island’s bountiful and honest freshness of seafood, exotic fruits, herbs and vegetables, Chef Yoss has developed a menu that blends his affinity to the local culture with his love of Pan Asian cuisine. Delicious and delightfully unique appetizers include Kumamoto Oysters on the Half Shell yuzu ponzu, Japanese Trout Caviar, Purple Shiso Flowers and Carpaccio of Black Bass made with Pineapple Vinegar, Smoked Jalapeño Sea Salt and Crispy Leeks. Main courses are Butter Poached Local Rock Lobster served with Hot and Sour Sweetbreads and Caramelized Pumpkin Puree and Soy-Mirin Braised Pork Belly with Lobster-Black Truffle Congee, Tokyo Scallions, Crisp and Parsnips.

“This is a thrilling opportunity to bring together my love of Pan Asian culture with my commitment to exciting, healthful and unique menus that both enhance our guests’ experience and broaden their palette,” said Yoss. “Our proximity to some of the world’s most pristine waters offers us an amazing selection of fresh seafood, as well as exotic fruits, vegetables and herbs. I’m excited to experiment with the characteristics of Pan Asian flavors, adding a twist of fresh, creative outlook each day to provide guests a sense of adventure when dining.”

From 7 – 10 p.m. daily, Starfish Bloo offers the Chef’s Table (in addition to their regular menu), an epicurean journey for adventurous guests that features a customized menu created by Chef Jack Yoss. The restaurant also offers a Sunday Brunch with live DJ performances and kids activities along with a selection of fresh Kumamoto oysters, imported cheese, roast station, raw bar items and black truffle congee with soy roasted pork from the live station and the option of free flowing champagne, wine, cocktails and beers.

Within Starfish Bloo is Ice bar – the perfect oasis for guests to transition from day into night. Featuring Artisan cheeses, imported and house-made charcuterie as well as more than 40 selections of wines to pair, guests can chill on beachside beds while enjoying crush cocktails, delectable raw bar and tapas selections before heading out into the moonlit night.
Other restaurants at W Retreat & Spa Bali-Seminyak include Fire, a grill restaurant featuring fire-cooked prime meats and seafood and Cellar, a private room within the restaurant that features a customized menu pairing original dishes with the perfect wine.
