Australian masterchef to prepare guest dinners and host cooking class in Six Senses' latest Maldivian resort
13th-15th July 2011, Six Senses Laamu, Maldives
Melbourne-born TV chef Pete Evans is to visit the idyllic southern Maldives to entertain and excite the palates of guests at Six Senses Laamu, the most exciting new resort in the archipelago.
In a whirlwind 3-day visit from 13th-15th July he will prepare a five course degustation dinner featuring several of his signature dishes, a four course seafood dinner the following evening, and conduct a cooking class for up to a dozen guests.
In keeping with Six Senses' SLOW LIFE philosophy the chef will be using as much local produce as possible, including herbs and vegetables from the island's own organic garden, as well as the freshest local fish straight from the Indian Ocean.
The programme and menus
13th July – Degustation Dinner, 5 Course Menu
For up to 30 guests in LEAF organic restaurant:
· Seared Scallops with Tomato and Basil (in the shell)
· Sweetcorn Soup with Crab Meat
· Chinese-style Duck Omelette
· Steamed Reef Fish with Lime and Coconut Sauce
· Cranberry and Cointreau Granita
14th July – Fresh Fish Supper, 4 Course Seafood Menu
For up to 20 guests in Deck-a-dence with its sunken tables inspired by the the catch of the day:
· Fresh Reef Fish with Yuzu Dressing
· Ho Ma Pla
· Tahitian Fish Salad
· King Prawns and Avacado
· Pete's Famous Chilli Crab or Lobster (based on the catch of the day)
July 15 – Cooking Class (1 starter/1 main course/1 dessert) for up to 12 guests in LEAF kitchen at 11am followed by lunch:
· Full demonstration on how to cook
· Starter - Chicken Larb Salad/Prawns with Avocado
· Main - Chilli Lobster (or Crab)
· Dessert - Cranberry and Cointreau Granita
Pete Evans biography in brief
Born in Melbourne but raised by the beach on Queensland’s Gold Coast, one of the reasons a career as a chef appealed to Peter Evans was the lure of surfing all day and working at night. After opening his first restaurant, Pantry, in Melbourne’s bayside suburb of Brighton in 1993 with his brother David and his brother’s best friend, Daniel, Pete moved to Sydney in 1996 where the team established Hugo’s in Bondi, Hugo’s Lounge in Kings Cross and Hugo’s Bar Pizza.
The latest addition to the group is the waterfront Hugo’s Manly, which opened in 2008.
Pete is a regular at cooking schools and food events around Australia. He has written three cookbooks, “Fish”, “My Table” and "My Grill" and the fourth is on the way, "The Party". He has worked as a TV presenter on both The LifeStyle Channel and Channel 9.
