Kowloon Shangri-La Appoints Chef Peter Ng as New Executive Chinese Chef at Shang Palace (China)

Peter Ng Wing Chiu joined Kowloon Shangri-La, Hong Kong in September 2010 as executive Chinese chef. In his current role, Chef Ng oversees the daily operation of the Michelin two-star Shang Palace Chinese Restaurant, including menu development, recipe creation, banqueting and all Chinese food production of the hotel. Supervising and developing the talent and career growth of a team of experienced Chinese chefs, many of whom have been working at Shang Palace for 10 to 20 years, is also part of Chef Ng’s job.

Having a humble start, Chef Ng worked at a number of local Chinese restaurants in the early 1980s where he gained valuable training and knowledge about traditional Cantonese cuisine. In 1986, Chef Ng accepted an offer of a position at one of the most recognised Chinese restaurants in Yokohama, Dohatsu Honkan. Moving to Japan opened up new opportunities and for the following decade, he went on to attain an extraordinary record of culinary achievement by working in several leading Chinese restaurants, five-star hotels and private clubs in London, Kagoshima, Beijing and Hong Kong.

During his tenure in Kagoshima, Chef Ng had the honour of working on the opening team as Chinese executive chef, assisting with the culinary operations at Ibusuki Iwasaki Hotel in Japan. While working at the China Club in Beijing, he had the pleasure of creating unforgettable meals for dignitaries including then American President George H.W. Bush, former Premier of the People’s Republic of China Zhu Rongji and Ms Deng Rong.

Prior to joining Kowloon Shangri-La, Hong Kong, Chef Ng was executive chef of the Hong Kong Golf Club, in which he had prepared his signature Cantonese dishes for such notable figures as Sir Li Ka Shing, Cheng Yu Tung and Joseph Yam Chi Kwong, among others.

With over 33 years of culinary experience, Chef Ng has made a reputation for his profound knowledge and expertise in Cantonese cuisine. As a people-person, he enjoys his role as the link between guests and the kitchen, and values the feedback that this interaction results in. Aspiring to take the Michelin two-starred Shang Palace to the next level, Chef Ng is determined to retain the Shang Palace traditions while bringing in new approaches to boost the menu design as well as overall food quality and presentation.
