Paul Wade has been appointed executive chef at The Lodge at Vail, A RockResort in Vail, Colo. To further guests’ overall dining and culinary experiences, Chef Wade will oversee all dining operations at the property, including Cucina Rustica restaurant and the AAA Four Diamond, award-winning Wildflower.
Chef Wade joins The Lodge at Vail with more than 20 years of professional culinary experience. A California wine country native, Paul has held a national reputation for his creative, unpretentious approach to Americana style cuisine. Beginning his culinary career with a seven-year apprenticeship in Northern California, Paul has worked alongside some of the most celebrated chefs in wine country. At 25, Paul became the head chef at Chanterelle Restaurant in Napa, Calif. where he developed his strong passion for sustainable, farm-to-table cuisine. After three years there, Wade joined the Four Seasons Wailea in Maui, Hawaii, where he was voted one of the Top 10 chefs in Hawaii and received both a Mobil Travel Guide Five Star and Zagat ratings.
After leaving Hawaii, Chef Wade spent 12 years in the Colorado culinary scene at the notable Park Hyatt in Beaver Creek, The Peaks and Golden Door Spa in Telluride and The Little Nell in Aspen. In Aspen, he was the founding chef of Montagna Restaurant and was executive chef for all of Aspen Mountain’s culinary operations.
