A Family Affair
Behind every good man there's a good woman — especially when that man's a Michelin-starred chef and the woman is his mom.
Andrea Accordi, Executive Chef at Four Seasons Hotel Prague's award-winning Allegro Restaurant, recalls spending hours as a child savouring the fragrances wafting out of his Mamma's, Teresa's, kitchen. The budding chef would squirm alongside his five siblings as they waited for a spoonful of Teresa's risotto that had already become legendary in their village.
Now, you too can sample the home-cooking that inspired Andrea's culinary career. February is "Mamma Mia" month at Four Seasons Hotel Prague, and Teresa is making her first-ever appearance in the Allegro kitchen to cook alongside her son.
On Teresa's special menu — which she'll personally present from February 3 to 6 — are delicacies from Italy's Veneto region, known for its cheese, salami and plump rice grains. Try a primi course of Potato gnocchi with tomato, red onion confit and guanciale (Italian bacon) or better still, order Teresa's Risotto with tastasal (the stuffing used to make salami). For the main course, who could resist Porchetta-rolled suckling pig stuffed with herbs and sautéed beans?
For dessert, take your pick from Tiramisu, Clementine panna cotta or Raisin fritters with rum sabayon. Clearly, when it comes to whipping up the tastiest Italian specialties, it's like mother, like son!
