Red, White and Green

When it comes to wine pairing there are no hard rules, just a few general guidelines. Put simply, reds dance on the palette with rich meats like lamb and beef, while whites mingle nicely with seafood and chicken.

But lately, there's a new choice confronting diners at Acqua, Four Seasons Hotel Miami's signature restaurant: What on earth goes with green wine?

Before you wrinkle your nose, this is no St. Paddy's Day fad. Green wines are actually whites or reds produced by winemakers using sustainable methods - good for the environment and good for you, too.

When ordering from the Asian and Latin inspired menu at Acqua, you might choose a Fume Blanc by Napa Valley biodynamic pioneer Grgich Hills, free of chemical herbicides, pesticides and synthetic fertilizers; or a Stag's Leap Napa Valley Cabernet Sauvignon, produced by methods that minimize environmental degradation. The choices don't stop there. In fact, 15% of the bottles on the Restaurant's award-winning wine list are now green. So, what goes with green wine? Everything.
