With two international celebrity chef restaurants and a state-of-the art wine bar with wine beverages hand-selected by the second ranked sommelier in America, Steve Olson, the newly redesigned and fully renovated AQUA Cancun guarantees an individualized, sensory experience to delight all of the five senses—sight, sound, touch, smell and, perhaps most importantly, taste. Chilled bottles of wine, bites of world cheeses and vines of round, ripe grapes are only a few of the delicacies welcoming guests to these sought-after tables.

Providing their own unique atmosphere, ranging from contemporary American to neo-Mediterranean, and catering to individual palates, these restaurants, Michelle Bernstein's MB and Franco Maddalozzo's Azur, feature international offerings, from crispy snapper with pickled ginger and basil to osso buco served with a red pipián sauce and polenta.

After a harmonizing day of healing touches, the centered body will truly relish the fresh, whole foods prepared by master chef Michelle Bernstein. A regular at The Food Network's Melting Pot and Iron Chef: America and Bravo's Top Chef and winner as Best Chef of the South by the James Beard Foundation, Bernstein has earned her title as culinary superstar with fantastic "New American" recipes that honor her Latin heritage. Born and raised in Miami by an Argentine mother and an Italian-American father, Bernstein combines secrets from her mother's home cooking, signature-Asian dishes and seafood favorites. Bernstein's use of fresh, organic ingredients ties into the wellness and balanced lifestyle offered by AQUA Cancun. To complement these haute progressive offerings, a carefully balanced combination of soft cool sounds, mod furnishing, comfy chairs, an open kitchen and an open-air terrace for outdoor dining heighten the restaurant’s contemporary ambience.

Azur, by Chef Franco Maddalozzo

Soft whispers of "sweet nothings" float like a sea breeze through the cool evening air. Paired with the romantic setting of an expansive infinity pool that seems to carelessly fall into the jewel-like waters of the Caribbean Sea, Italian chef Franco Maddalozzo's rich, robust flavors of the Mediterranean, Mexico and Asia, combined with the freshest seafood that the destination has to offer, delights taste buds and captivates hearts. Placing an innovative twist on the traditional buffet, the al fresco dining experience features a selection of tasty seafood pastas, a wood-burning oven and a mouthwatering ceviche bar.

Contemporary Mexican Cuisine at Siete

AQUA Cancun's third restaurant, Siete, provides a contemporary spin on authentic Mexican cuisine, served amid industrial-chic decor, including clean lines, matte metals and clear glass accents, as well as a pop-art motif that is supported by warm and whimsical colors, brightly colored lighting and a selection of regional contemporary art and colorful pop portraits of Mexican personalities such as Frida Kahlo and Diego Rivera.

AKA Bar

With a winding aqueduct, whose twists and turns form their own private, hidden alcoves, and a book collection that could marvel the New York Public Library, this is the place to sip an after-dinner cocktail or to dive into a good book. AQUA Cancun's AKA Bar, the resort's newest light dining option, features a demonstration kitchen, an urbane wine cellar and a cozy book corner for those seeking privacy. Designed by New York-based wine connoisseur and beverage educator Steve Olson, AKA Bar features the most extensive wine and spirits selection in the area, including more than 200 bottles of wine and 60 tequilas and mezcals. The wines represent many regions and grape varieties, with the primary focus on Spain, Argentina, Chile, Uruguay and, of course, Mexico. The cocktail list include 16 signature tequila cocktails, three types of sangria, tequila flights and mezcal flights.

In addition to the offerings at AKA Wine & Mezcal bar, the resort boasts several signature drinks available only throughout the Aqua Cancun resort. Liquid Smoke, a house margarita like no other, features Don Julio Blanco Tequila, Grand Marnier, fresh lime and agave nectar with the smoke of Del Maguey Chichicapa Mezcal. The Michy Bonita, a special blend to match the talent and style of our chef, Michelle Bernstein, is a beautiful combination of Tanqueray No. Ten, fresh grapefruit, orange and lime with a touch of chamomile. The bar also boasts the Watermelon Mojito, an incredible blend of fresh watermelon crushed with yerba buena, cane syrup and Havana Club Platinum Rum.

EGOS

EGOS is an ultra-posh bar and lounge whose seductive, electric and eclectic guests dance till dawn to the rhythmic pulse of a variety of high energy techno cuts, spun by in-house DJ, Gotardo Dorado. Evocative of a sexy South Beach full bar, EGOS attracts partygoers, both day and night.

The Shore Club at AQUA

As an exclusive, adults-only beach bar and pool area, the Shore Club flaunts private cabanas, hammocks, sunbeds and massage tables, perfect for sipping beachside martinis and fresh fruit concoctions. With energizing rhythms spun by in-house DJ Gotardo Dorado and a light, cool mist chilling the air, the Shore Club makes an ideal setting for flirting and romance.
