Yves Samake, executive chef at The Ritz-Carlton, Atlanta, creates a four-course dinner menu of African dishes paired with South African wines in recognition of Black History Month, the annual celebration highlighting the people, culture and events of Black history worldwide. The menu will be offered Friday and Saturday evenings in February, except February 13 and 14, 2009, in Atlanta Grill at The Ritz-Carlton, Atlanta.
“This is the second year we’ve presented a menu of African cuisine as a unique way to commemorate Black History Month,” said Chef Samake. “Anyone with an interest in world cuisines should enjoy the menu and the wines.”
Chef Samake’s repertoire of African recipes derives from his own family history. His father immigrated to France from Mali, the largest country in West Africa and the location of some of the continent’s most intriguing cultural sites, including the legendary Timbuktu. Chef Samake’s mother, an accomplished Parisian cook, learned to make a variety of African dishes, and young Yves began his lifelong interest in cooking and cuisines at her side.
The four-course dinner menu will showcase dishes from Senegal, and each course is paired with South African wines selected by Sommelier Silvio Garcia. The cost is $78 per person without paired wines, $108 per person with paired wines, exclusive of tax and gratuity.
