As of August 2011, the Caviarterra restaurant at the Ritz-Carlton, Moscow has a new chef, Alexey Pirogov-Sitnikov.

At thirty-eight years old, Alexey is a graduate of the Moscow Cooking College "Tsarytsino". He also studied economics at the Academy of Labor and Social Relations.

A multifaceted professional with various experiences, Alexey is the ideal chef for the Caviarterra restaurant that offers Russian, European and American recipes on the menu.

In his previous positions he mastered the cuisines of Italy, France, the Mediterranean region, Asia and Latin America. He has excellent teaching skills acquired during his work at the "Gastronom" cooking classes and he also created the recipes for the line of microwave and convections ovens by Samsung. Born in Moscow, Alexey often visited his grandmother living in the countryside near Voronezh. There he learnt how to cook the delights of traditional Russian cuisine as well as the skills he uses still today.

In his new role as Caviaterra's Chef, Alexey will introduce a few new items on the menu and modify the existing ones. For instance, his first endeavor will be baked sterlet with mashed potatos. The sterlet will be baked in its skin to ensure that the juices stay inside the fish and don't evaporate. The delicious dish will be accompanied by mashed potatos prepared with butter brewed with white mushrooms.
