Clearing a piece of lawn to make way for a vegetable patch, the Hotel has embarked on a project to educate staff about sustainable farming methods. Seven departments are involved, each tasked with tending to a plot of land with a chosen crop - lime, lemongrass, basil, tarragon or turmeric, to name a few. Using only organic compost for fertilizer, the teams are helping to harvest fresh produce from the vegetable patch directly for use in its kitchens.

Enjoy the Banana Cake Caramelised with Maple Syrup and Double Cream at One-Ninety? Thank a member of the engineering team, who tended the bananas. Even the Executive Office is involved, following a strict watering and weeding schedule for the curry leaves.
