The management of The College Hotel announced today that Schilo van Coevorden, presently the Executive Chef at The Dylan Amsterdam and The College Hotel, will be fully employed by The Stein Group as of 1 January 2006. Van Coevorden will remain the Executive Chef at The College Hotel and will become the culinary advisor to The Stein Group. The Stein Group manages The College Hotel and ten other small 5-star luxury hotels in Europe, with an additional four hotels currently under development.
During his extensive career, Schilo Van Coevorden worked under the tutelage of Roger Souvereyns (Belgium) and Cees Helder (Parkheuvel, Rotterdam). He also gained culinary experience working in London and Dubai, where he was introduced to Asian cuisine. He went on to work in Hong Kong and Japan, and in 1999 Anouska Hempel (of hotels Blakes and The Hempel in London) brought him to Amsterdam, where he became Executive Chef in charge of food and beverage at Blakes. Blakes was later renamed The Dylan under management of The Stein Group in 2005.
The College Hotel officially opened its doors in May 2005 and recently received a prize for Best Hotel Interior in Europe. The College Hotel is owned by the ROC hotel management school of Amsterdam, and its aim is to be a training hotel for students of the Amsterdam School of Hotel Management, Bakery and Tourism. The intention of the The College Hotel is to provide the international hotel industry with new professional talent who have been trained in a well-designed, small luxury boutique hotel.
