As Sous Chef, you will play a pivotal role in supporting the Head Chef and managing our culinary production while ensuring compliance with aviation and health standards. We’re looking for a professional with experience in luxury catering or Michelin-star establishments.
Responsibilities:
Support in kitchen management: Assist the Head Chef in overseeing the culinary production, ensuring consistent quality, presentation, and taste across all dishes.
Coordination of daily production: Supervise kitchen staff in preparing high-quality meals tailored for private jets, following established recipes and procedures.
Compliance with food safety standards: Ensure all kitchen operations adhere to aviation and health standards, including HACCP regulations and food safety protocols.
Inventory and supply control: Collaborate in managing inventory, ensuring the proper storage and conservation of ingredients while minimizing waste and ensuring efficient use of resources.
Kitchen efficiency optimization: Assist in streamlining kitchen processes to increase productivity and ensure timely delivery of orders, maintaining high standards of quality.
Team leadership: Coordinate and supervise kitchen staff during daily operations, ensuring everyone adheres to the established guidelines and maintains high performance.
Customizing meals according to client needs: Work with the Head Chef to create tailored menus based on client requests, ensuring all specifications are met.
Staff training and development: Help train and develop kitchen staff on culinary techniques and industry-specific procedures related to private aviation catering.
Requirements:
European passport or work permit for Europe (Paris, France).
Fluency in English is essential; knowledge of French is desirable.
Experience in high-end cuisine, with knowledge of pastry-making as a plus.
Experience in luxury catering or Michelin-star establishments.
Flexibility in working hours and handling production volumes.
Strong organizational and communication skills, with the ability to manage both kitchen and administrative duties.
Ability to manage costs and contribute to continuous improvement in kitchen operations.
Additional Information:
Location: Villepinte, with operations at Le Bourget Airport.
Training: Training in Paris will cover processes specific to business aviation and HACCP procedures.
Flexibility: The role requires adaptability in terms of working hours and the ability to handle special requests.
