We currently recruiting a Fine Dining Restaurant Manager (Michelin Star Experience Required) to join our Food & Beverage team at Carton House.

Key Responsibilities:

• To implement and maintain the highest standard operating procedures for all food services in the Morrison Room Restaurant.
• To work closely with the Food & Beverage Director to achieve required targets in relation to payroll and GP percentages.
• You also must be able to manage under pressure and be able to maintain all administrative elements required of the role such as scheduling, gross margins, labour margins, performance management and recruitment.
• Supervising all restaurant functions and your team throughout the service
• Briefing the restaurant team and ensuring the restaurant is set to the required standard
• Manage booking system to maximise guest bookings
• Resolving staff and customer concerns quickly and efficiently
• Co-ordinating and working closely with the kitchen brigade
• Checking all bills are paid on time and room charges are posted correctly
• Scheduling, training and implementing performance management within your department

The ideal candidate will have the following key skills:

• Fine dining / Michelin Star restaurant experience required
• Excellent team management skills
• Strong leadership skills to motivate and manage your team
• Excellent communication skills
• A positive attitude and A can-do attitude
• A structured and organised approach to work planning
• The confidence to liaise with other heads of department and meet our guest’s expectation
• Personal charm to greet organisers, hosts and VIPs and to show clients you are giving them full attention
• Excellent organisational and administrative skills
• A cool, calm composure in order to deal with last minute requests
• Should possess in depth knowledge of Food and Beverage preparation and presentation
